Dal Recipe


Ingredients:


  • 1 cup Toor Dal
  • 3/4 cup Moong Dal
  • 3/4 cup Masoor Dal
  • 2-3 tablespoon oil (for cooking)
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 3-4 cloves
  • 2 green chillies (slit)
  • 2 green chillies (diced)
  • 2 medium-sized onions (diced into medium chunks)
  • 6-7 garlic cloves (minced)
  • 1-inch piece of ginger (minced)
  • 1 teaspoon mustard seeds
  • 3/4 teaspoon fennel seeds (Sauf)
  • 4-5 dry red chillies
  • 1-2 teaspoons cow ghee
  • 1-2 tablespoons amchur (dry mango) powder
  • 1 tablespoon kitchen king masala
  • A pinch of asafoetida (hing)
  • Fresh coriander leaves (for garnish)

Instructions:


  1. Prepare the Dal:

    • In a large bowl, combine 1 cup Toor Dal, 3/4 cup Moong Dal, and 3/4 cup Masoor Dal.
    • Add 1 tablespoon oil, 1/2 teaspoon turmeric powder, and salt to taste.
    • Toss in 3-4 cloves and 2 slit green chillies.
    • Add enough water to cover the dal, and pressure cook for 10 minutes on medium heat.
  2. Prepare the Tempering:

    • In a separate pan, heat 3-4 tablespoons oil over medium heat.
    • Add half of the diced onions and saut├й them until they turn light brown.
    • Add 6-7 minced garlic cloves, 2 diced green chillies, and 1-inch piece of minced ginger. Saut├й for an additional 2 minutes.
    • Now, add 1 teaspoon mustard seeds and 3/4 teaspoon fennel seeds to the pan. Let them splutter.
    • Add the remaining diced onions and cook until they become soft and translucent.
    • Toss in 4-5 dry red chillies and saut├й for another minute.
    • Add 1-2 teaspoons cow ghee and cook for 1 minute to bring out the flavor.
  3. Spices and Flavoring:

    • Stir in salt to taste, 1-2 tablespoons amchur (dry mango) powder, 1 tablespoon kitchen king masala, and a pinch of asafoetida (hing).
    • Mix well, allowing the spices to blend into the onion-garlic mixture.
  4. Combine the Dal:

    • Once the dal has cooked in the pressure cooker, add it to the pan with the tempering.
    • Mix everything thoroughly and cook for 2 minutes to allow the flavors to meld.
    • Add water as necessary to reach your desired consistency.
  5. Final Garnish:

    • Garnish with freshly chopped green coriander leaves.

Serve: Serve hot with steamed rice or flatbread like roti or naan for a delicious meal. Enjoy your flavorful homemade dal!
